Tuscany is one of the most important wine regions in the world. It would be a shame to leave without spending a moment among the vineyards, glass in hand, with views over the hills. For those interested, we are organising a group trip to Fattoria Fibbiano, a family-run winery 30 minutes from Il Gattero.
This is a fully optional activity. Each person covers their own entry fee. Transport by your own car or together with us or other guests.
Included in the price: a private tour of the historic estate, the story of its history, a walk through the vineyards with explanations of local grape varieties, a visit to the cellar with an explanation of the winemaking process, and finally a tasting of five exceptional wines, served with local cured meats and cheeses. All set against the beautiful backdrop of the vineyard landscape.

Fattoria Fibbiano is located in the municipality of Terricciola, in the beautiful valley of the Era river. The estate's history dates back to 1707, a date carved into the stone of the main building's foundations.
But the true history of this place is even older, and literally hidden in the ground. Terricciola, known as the "town of wine", once lay beneath the sea. The soil on which the vineyard stands is literally packed with fossilised oyster shells and corals, which may sound like a geological curiosity, but has a real impact on the taste of the wine: this mineral-rich soil gives the wines a distinctive saltiness and depth that you won't find in many other parts of Tuscany.
The modern history of the estate begins in 1997, when Giuseppe Cantoni, a manager returning from a long career abroad, bought the farm to reconnect with his family's agricultural roots. Today it is run by his sons: Matteo and Nicola.
What sets Fibbiano apart from hundreds of other Tuscan wineries is their obsessive commitment to native grape varieties. When many Tuscan wineries in the 1960s and 70s were switching to international varieties to produce so-called Super Tuscans, the Cantoni family chose a different path, systematically selecting and replanting local varieties, in practice restoring their vineyards to the form they had centuries earlier.
fter moving to Terricciola, the family discovered in their vineyards a variety called "Colombana", identical to the one that grew in Lombardy, in the very same location as the famous "Fonte delle Donne" (Women's Spring). From that moment on, they had no doubt: their first white wine would be named "Fonte delle Donne".
Colombana may be the only grape variety in the world currently produced under its own name by just one single winery, Fattoria Fibbiano.
The estate relies exclusively on native Tuscan varieties: the red grapes Sangiovese, Sangiovese Forte, Sangiovese Polveroso, Canaiolo, Ciliegiolo and Colorino, and the white grapes Vermentino and Colombana. Some of the vines are over 100 years old.
Among the wines you may taste during the tasting are Casalini Chianti Superiore DOCG, Ceppatella DOC Terre di Pisa Sangiovese, and Fonte delle Donne, the wine that started it all.
